Chai Spice Snickerdoodles

Ingredients
  

Spices:
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp ground cloves
  • 1 3/4 tsp ground cardamom
  • a couple pinches of black pepper
Dry Ingredients:
  • 2 3/4 cups all purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup 2 sticks unsalted butter, at room temperature
  • 1 3/4 cup sugar divided
  • 2 large eggs

Method
 

  1. Combine spices in a small bowl and set aside.
  2. Sift together dry ingredients and 1 tsp of the spice mix.
  3. In a mixer at medium speed, cream together butter and 1 1/2 cups of sugar until fluffy. (or use a hand mixer or mix by hand) Scrape down sides and beat in eggs. Add the sifted dry ingredients in manageable amounts and beat until dough is combined.
  4. Chill in the refrigerator at least 1 hour. (can chill overnight)
  5. Preheat oven to 400℉. Combine remaining 1/4 cup of sugar with the spice mixture. Scoop small amount of dough with a cookie scoop or spoon and roll into a ball. Coat with sugar-spice mixture and place on cookie sheet about 2 inches apart.
  6. Bake for 8 to 10 minutes, rotating the sheet at the halfway point. Makes about 70 cookies using a small cookie scoop.
