powdered sugar covered butternut ball cookies

Butternut Balls (aka Mexican Wedding Cookies or Russian Tea Cakes)

Melt in your mouth pecan shortbread balls covered in powdered sugar.
Course: Dessert

Ingredients
  

  • 2 1/2 cups flour
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1 cup butter - softened
  • 2 tsp vanilla
  • 1 cup chopped pecans

Method
 

  1. Mix all ingredients together, with a spoon or by hand.
  2. Shape into balls, approximately 1 Tbsp of dough per ball.
  3. Bake 10 - 12 minutes at 400 degrees. Do not brown.
  4. Roll in powdered sugar while still warm. Cool completely. For best presentation, freeze balls, then re-coat with powdered sugar immediately before serving.
